Do you ever find yourself saying “ahhh I don’t have time for breakfast!” Then you just wind up grabbing a banana or just a granola bar, or maybe you even walk out the door empty handed.

A study done by Instantly found that 53% of Americans skip breakfast at least once a week. The study also found that convenience is the number one thing that Americans consider when they decide what to eat for breakfast.

The solution: overnight oats with chia seeds.

This recipe takes less then 10 minutes to prepare and tastes amazing when you open it up in the morning. As a college student and collegiate athlete my mornings start early all week. I don’t have time to make big decadent breakfasts every morning. With either class or weightlifting starting at 8:00am I need to have clean energy to fuel me for my day. My overnight oat recipe is packed with power to help me do that.

My recipe contains:
380 calories
18 grams of protein
11.5 grams healthy fat
11 grams of fiber
4 mg of iron

Overnight oats are great because you take the ten minutes to make them at night, then when you open the fridge in the morning your breakfast is right there and ready to be devoured. You can just grab this pre-made meal and go, or sit down and take your time to eat it. Either way, it is delicious, filling, and packed with nutrients to fuel you throughout your day.

Overnight Oats with Chia Seeds Recipe:

 

Ingredients:

  • 1/2 cup Rolled Oats
  • 1 Tbsp Chia Seeds
  • 1/2 cup Milk
  • 1/4 cup Plain Greek Yogurt (brand I use)
  • 1/4 cup frozen blueberries
  • 1/4 tsp cinnamon
  • 1/4 tsp cocoa powder
  • 1 tsp pure maple syrup
  • 1/4 tsp vanilla extract

Instructions:

  1. Add all ingredients together in a least an 8 oz glass jar.
  2. Mix together until well combined.
  3. Put in fridge for at least to hours (I recommend all night).
  4. In the morning, take out and enjoy!

The Greek yogurt creates a smooth consistency that is almost pudding like. The oats and chia seeds add nice texture. The blueberries create a burst of sweetness and flavor. Finally, the cinnamon, cocoa, and  vanilla add a depth of flavor that makes each bite delicious.

Another great thing about overnight oats is that it will not break your bank. It costs less than a dollar to make this for breakfast. I probably eat this 4 times a week for breakfast, and still love it!
