Tasty and Simple Vinaigrette Dressing Recipe
When many people think of a salad, their first thoughts are of dry, flavorless green leaves topped off with a thick and most likely unhealthy dressing. This typical thought of a “salad” is not what a salad should be at all. In fact, the dressing you put on your choice of greens will either make or break the health benefits you are getting from them in the first place.
Olive oil is one of the best sources of healthy fat. Using olive oil as one of the key ingredients in a dressing adds excellent flavor and satiety. A nutritious dressing elevates the health benefits of the salad greatly.
Personally, I love the taste of vinegar and the acidic kick of lemon or lime juice. It is easy to alter the flavor of a dressing to your own specific taste buds by simply changing the ratio of oil to acidic ingredients, like vinegar or lemon juice. Below is the recipe for a single serving of one of my favorite dressings.
Lemon-Ginger Vinaigrette Recipe: Single Serving
- 1/2 Tbsp Extra Virgin Olive Oil
- 1/2 Tbsp Rice Wine Vinegar
- 1/2 Tbsp Lemon Juice
- 1/2 Tbsp Dijion Mustard
- 1 tsp Squeeze Ginger (what I use)
- salt and pepper to taste
- Add all ingredients into a bowl and mix throughly until well combined.
- Use it to top salads, vegetables, rice or quinoa, or as part of a marinade.
The salad pictured has the lemon-ginger vinaigrette and these toppings:
- romaine lettuce
- baked zucchini
- feta cheese
